KNACKWURST  SALAT 

Salad with Knackwurst

2 Knackwurst
1 bunch radish
4 spring onions (white and pale green parts)
1 tin of cannellini or butter beans, (ca.400g)
(drained of the juice in the tin)
50 g lamb's lettuce
8 tbsp. pumpkin seed oil
70 ml vinegar
salt, pepper

   

 

Peel Knackwurst and cut into thin slices. Cut radish and spring onions into thin slices too. Combine Knackwurst, radish, spring onions, beans and lamb´s lettuce.
Mix well pumpkin seed oil, vinegar, 4 tbsp. water, salt and pepper. Blend salad with marinade carefully.
