Lentil Tuna Salad

2 tomatoes
1 small red onion
3 tbsp. olive oil
1 tbsp. lemon juice
1 tsp. mustard
2 cloves garlic (crushed)
1/2 tsp. cumin (ground)
1/2 tsp. coriander (ground)
400 g lentils canned (drained)
200 g tuna from the can (drained)
2 tbsp. parsley (chopped)
salt pepper

 

 

Core tomatoes and dice finely. Chop the onion finely. For the dressing mix well olive oil, lemon juice, mustard, garlic, cumin
and coriander. Mix onion, tomatoes and lentil in a large bowl.
Pluck tuna with a fork and mix with the lentils. Fold in parsley. Pour dressing over salad and mix well.
Season with salt and pepper.
