Orzo Pasta Salad with Salmon

350 g orzo pasta (rice pasta, kritharaki)
1 red pepper
1 onion
2 cloves of garlic
2 spring onions
1/2 cucumber
250 g smoked salmon
Marinade
2 tbsp. mustard (medium hot)
3 tbsp. balsamic vinegar (light)
1 tbsp. lemon juice
8 tbsp. olive oil
Salt

 

 

Pull the salmon into small pieces. Cut the pepper into fine strips. Cut the spring onions into rings, including the light green parts. Finely chop the onion and garlic. Blanch all three briefly and rinse with ice-cold water. Remove the seeds from the cucumber and dice. Cook the pasta in salted water according to the instructions on the packet until al dente, drain and mix with the onion mixture, diced cucumber and pepper strips in a bowl. Add half of the salmon to the salad. Mix the ingredients for the marinade together well and marinate the salad. Use the remaining salmon for garnishing.
