Turkey Salad

100 g lamb's lettuce or rocket salad
300 g turkey breast
1 avocado
100 g dried tomatoes in olive oil
2 tbsp. mustard
juice of half a lemon
4 tbsp. olive oil
1 tbsp. vinegar
salt, pepper

 

 

Preheat oven to 170 ° C.
Rub turkey breast with pepper and sear on all sides.
Wrap in aluminum foil and simmer in oven about 20 minutes.
Mix well mustard, vinegar, lemon juice, olive oil and 2-3 tbsp. water to a marinade. Season with salt and pepper.
Peel avocado and cut into strips.
Place lettuce leaves on 4 plates. Cut turkey breast into thin slices.
Lift tomatoes from the glass, drain and serve with the avocado on the salad. Sprinkle with dressing.
