Rice Noodle Salad

250 g rice noodles
5 tbsp. oil
400 g mixed mince
3 tbsp. soy sauce
1 tsp. sugar
1 - 3 pepperoni
150 g petits pois
80 g fresh ginger
1 punch spring onions
1 lettuce
juice from 1 lemon
salt

 

 

Put rice noodles into a bowl and cover with boiling water for 10 minutes. Heat 3 tbsp. oil in a pan, add mince and fry them stirring regularly. Add 2 tbsp. soy sauce, sugar and simmer until soy sauce is boiled down. Stir in finley chopped pepperoni. Put mince into a salad bowl. Boil pois until they have a slight bit, douse with cold water, let them drain and add to mince.
Douse noodles with cold water, let them drain, cut noodles with scissors and add them to mince. Wash spring onions, remove dark pieces and cut the rest into small rings. Peel and chop ingwer. Mix ingwer and spring onions into salat. Season to taste salat with soy sauce and salt. Before serving salat, fold in lettuce leaves and lemon juice.
