Pork Stripes

450 g pork filet
250 g mushrooms
350 g orecchiette (pasta)
1 tbsp. lemon juice
1 pinch of saffron
4 tbsp. cream
salt, pepper, oil
12 quail eggs or 6 small. eggs
red wine sauce
1 tbsp oil
1 onion (chopped)
1 tbsp. tomato paste
250 ml of red wine
1 tsp. oregano

 

 

Sauce: Heat oil and sauté the onion until tender. Stir in red wine, tomato paste and red wine. Thicken sauce and set aside few hours.

Hard Boil eggs hard, peel and halve. Pound meat and cut into thin strips. Slice the mushrooms.
Heat oil in a pan and fry the fillet on all sides over high heat 5 minutes .
Add the mushrooms and fry them for 2 minutes. Add red wine sauce and simmer all for 20 minutes.
Boil noodles in salted water with lemon juice and saffron until al dente.
Douse pork stripes with cream, stir well and season with salt and pepper and simmer 3 minutes more.
Place noodles on plates and cover with meat and the sauce. Garnish with eggs.
