Preheat the oven to 200°C (top/bottom heat). Peel and
halve/quarter the potatoes. Halve the garlic bulb. Place in a large
roasting tin with the ribs. Peel and slice the ginger, bring to the boil
in a pan with the spices, sugar,
600 ml water and soy sauce. Pour over the ribs and potatoes. Cover and
cook on a medium heat for approx.
90 minutes. Cut the leek into rings and add to the roasting tin 15
minutes before the end of the cooking time.
Boil 400 ml water with honey and miso. Stir in the butter and reduce
until creamy.
Remove the roasting tin from the oven, increase the temperature to 220°C
and baste the ribs with the miso sauce. Cook uncovered on the middle
shelf for 15-20 minutes until browned. |
