SCHWEINSMEDAILLONS  mit  COUSCOUS  SALAT

Pork Medallions with Couscous Salad

Ingredients for 2 people

2 tbsp. lemon juice
1/2 tsp. mustard
3 tbsp. olive oil
1/2 cucumber
200 g cherry tomatoes
2 spring onions
250 g pork fillet
2 cloves of garlic
1 tsp. paprika powder
150 ml vegetable soup
100 g couscous
1/2 bunch parsley (chopped)

 

 

Mix the lemon juice, mustard and 2 tbsp. oil well. Wash, peel and finely dice the cucumber.
Wash and halve the tomatoes. Finely slice the spring onions. Peel and crush the garlic. Cut the meat into medallions and sear on all sides in a pan. Fry over a medium heat for about 8 minutes.
Heat 1 tbsp. of oil in a wide pan and sauté the onions, garlic and peppers. Deglaze with soup. Sprinkle in the couscous, leave to stand for 2 minutes and simmer over a low heat for 3 minutes.
Add the vinaigrette to the couscous and mix together. Flavour with salt and pepper.
Fold in the tomatoes, cucumber and parsley.
