CHAMPIGNONS  mit  CHORIZO

Mushrooms with Chorizo

300 g Chorizo (or Gralic sausage)
500 g mushrooms
2 cloves of garlic
100 ml sherry (medium)
1 tbsp. sherry vinegar
1 bunch parsley (chopped)
olive oil, salt, pepper
 

  Slice the chorizo. Clean mushrooms clean and cut in half depending on the size. Peel the garlic.
Fry chorizo briefly in olive oil and remove from the pan. Add mushrooms and fry 5 minutes, press garlic over it. Season with salt and pepper. Deglaze with sherry and douse with sherry vinegar. Cover and simmer for 10 minutes. After 5 minutes, stir in chorizo. Stir in parsley finally.
