Salmon with Eggs Carpaccio

8 eggs
4 tbsp. Baslamico vinegar (white)
2 tbsp. oil
2 tbsp. dill (chopped)
1 shallot (finely chopped)
100 g frisee salad
50 g rocket salad
150 g salmon (smoked)
salt and pepper

 

 

Boil eggs hard, douse with cold water and cut into slices.Mix well to a vinaigrette, vinegar, oil, salt, pepper and maybe 1 tsp. honey.
Stir in shallot and dill.
Wash frisee and rocket salad, tear frisse into pieces. Cute salmon into strips.
Arrange eggs, salad, vinaigrette and salmon on serving plates.
