Heat oil and sauté onion over medium heat in 15 - 20 minutes dark brown,
stirring frequently. Add garlic and ginger and sauté about 1 minute. Add
coriander and stir for 1 minute more, add turmeric, cumin and garam
masala and pepper powder and fry for 30 seconds while stirring. Pour on
with 250 ml of water and simmer for 10 minutes. Stir in tomatoes and
simmer another 5 minutes.
Season with salt and add chicken, beef or lamb meat, fish or vegetables.
Pour on for a chicken curry 375 ml of water, for a lamb or beef curry
550 ml, 250 ml for a fish curry, and for the vegetable curry 500 ml and
simmer until tender.
Chicken Curry: 500 g chicken meat
Lamb or beef curry: 400 g meat for cooking
Fish Curry: 500 g cod fillets or 2 salmon steaks
Vegetable Curry: 300g mixed vegetables, diced |
