FRÜHLINGSZWIEBELN  in  SCHARFER  SAUCE

Spring Onions in a Spicy Sauce

2 bunches of spring onions
250 g minced beef
2 cloves of garlic
1 thumb-sized piece of ginger root
1 red pepper
1 red chilli
200 ml of beef stock
3 tbsp. soy sauce
1 El hot soja bean paste
1 tbsp. cornstarch ( cornflour )
2 tbsp. water
salt, pepper, 1 tsp. sugar
2 tbsp. parsley ( chopped)
 

  Clean, wash and cut spring onions diagonally into 3 cm long pieces. Peel and press the garlic. Peel ginger and chop finely. Wash pepper , remove seeds
and cut into fine strips. Wash chilies and cut into rings. Mix well soy sauce with bean paste and water with the cornstarch .
Heat 3 tbsp. oil in the wok , add the minced meat , stir-fry 1 minute and then keep warm.
Heat the remaining oil , add spring onions and stir-fry 1 minute. Now add garlic , ginger , pepper , chilli while stirring , pour in the soup and cook for 1 minute. Stir in cornstarch and soy sauce. Season to taste with salt, pepper and sugar and simmer until the sauce thickens .
Serve sprinkled with parsley .
