PIKANTE  GRIESSKNÖDEL

Savory Semolina Dumplings

500 ml milk
1 tbsp.butter
130 g semolina
3 egg yolks
150 g bacon
200 g bacon (sliced)
1 bunch of chives
salt, nutmeg (grated)
 

  Bring to a boil milk, butter, salt and nutmeg. Boil semolina, stirring constantly.
Over low heat stir until the porridge comes off from the pot - about 10 minutes. Remove from heat and stir in the egg yolk. Fry bacon slices in a frying pan crispy and drain on kitchen paper. Cut bacon into small cubes, fry, drain and mix into the semolina mixture. If it is cold, form 10 dumplings and simmer in salted boiling water for 15 minutes.
Finely chop the chives, take dumplings out of the water, drain and serve sprinkled with chives on warmed plates with fried bacon.
