Coffee Cream with Raspberries

800 g sour apples
juice of 1 lemon
juice of 2 oranges
3 tbsp. sugar
1 cinnamon stick
2 tbsp. walnuts (chopped)
4 dates (cut into strips)
250 g quark
100 g yogurt
2 tsp. honey
1 / 4 tsp. cinnamon
zest of 1 / 2 lemon (grated)
 

  Whip cream with the coffee powder and 2 tbsp. sugar, stir in rum.
Mash raspberries with a fork and 1 tbsp. sugar, vanilla sugar and lemon juice and mix well. Crumble Amaretti coarsely.
Fill coffee cream, marinated raspberries and Amaretti alternately into glasses and refrigerate.
Before serving garnish with raspberries and dust with powered sugar.
