PAELLA  MIXTA

Paella Mixta

 
250 g paella rice
350 g seafood mix (frozen)
400 g mussels without shell (frozen)
600 g chicken breast
3 tbsp. olive oil
500 g fish fillet
2 red peppers
1 onion
3 garlic cloves
1 saffron thread
600 ml fish stock
1 can (425ml) chopped tomatoes
4 stalks parsley
salt, pepper
 

  Defrost the seafood and mussels. Cut the fish into large cubes. Wash the peppers and cut into rings. Peel and finely dice onion and garlic.
Fry the chicken breast in the oil. Remove the meat and season with salt and pepper. Sauté the fish, season and remove. Fry the pepper, onion and garlic. Add saffron, stock, tomatoes and rice. Season with salt and pepper. Put the meat on top. Bring to the boil and cook over medium-low heat for about 10 minutes. Do not stir.
Place the seafood, mussels and fish on top of the paella and press a little into the rice. Cook to the end. Wash and roughly chop the parsley.
Serve sprinkled with parsley.
