GEMÜSESUPPE  mit  FASCHIERTEM

Vegetable Soup with Minced Meat

1 onion
2 cloves of garlic
500 g minced meat from beef
3 zucchini
1.7 liters beef stock
200 g tomatoes (canned)
120 soup noodles
50 g Parmesan cheese (grated)
oil
salt, pepper, oregano

 

 

Peel onion and garlic and chop finely. Drain the tomatoes and chop coarsely. Cut zucchini into thin slices.
Heat oil in a large saucepan and sauté onion and garlic. Add meat and fry for about 8 minutes while stirring. Add some dried oregano and zucchini, pour in the soup and simmer for 15 minutes. Season with salt and pepper. Fold in tomatoes and noodles and simmer until the noodles are al dente.
Serve sprinkled with cheese.
