Kohlrabi Soup with Smoked Salmon

Ingredients for 2 people

1 small onion
300 potatoes
2 kohlrabi (about 600 g)
40 g smoked salmon
700 ml vegetable soup
2 tbsp. creme fraiche
salt, pepper, nutmeg, oil

 

 

Peel and chop onion. Peel and dice Kohlrabi and potatoes. Sauté onion in a little oil, add diced vegetables, sauté briefly and then douse soup. Cover and simmer about 25 minutes.
Cut salmon into strips. Puree soup with a hand blender, stir in sour cream and season to taste with salt, pepper and nutmeg.
Serve garnished with slices of salmon.
