Peel and chop onion. Heat oil in a stock pot and stew
the onion. Add minced beef and pork and sear, stirring regularly. Douse
with soup and spice with salt and pepper. Cut up small sauerkraut. Dice
gherkins finely. Put sauerkraut, gherkins and tomato paste into the pot.
Simmer soup 30 minutes. Season to taste with paprika, salt and pepper.
Remove from the hotplate and fold in cream fraiche.
Variant: instead of paprika use chinese Five Spice Powder. |
