Cut green, onion and garlic into small cubes. Dice
tomatoes, one reserve for added to soup.
Heat butter in a pot, add green, onion and garlic and braise lightly
all. Stir in tomato paste and add tomatoes. Douse with 1 litre water and
bring to the boil. Stir in stock cubes and add herbs. Let all simmer for
about 1 hour. Cut basil into stripes.
Blend soup and seson to taste with salt and pepper. Add basil stripes,
cut reserved tomato into cubes and warm up them in soup. Serve soup with
a blob of creme fraiche. |
