Wash the lentils, beans and sweetcorn in a sieve one
after the other and drain. Remove the seeds from the peppers and
chillies and cut into small cubes. Peel and finely dice the onion and
garlic. Heat the oil in a large pan and sauté the onion. Add the diced
garlic, peppers and chillies and sauté together for 3 minutes. Add the
lentils and tomato purée, mix well and sauté. Pour in the vegetable soup.
Add the chopped tomatoes, tomato purée, beans and sweetcorn. Season with
paprika powder, cumin, salt, cayenne pepper, sugar and chilli powder.
Mix well and simmer with the lid half open for 15 minutes. Stir
occasionally. Finally, season to taste. |
