COUSCOUS  mit  TOMATEN  und  GURKEN  

Couscous with Tomatoes and Cucumbers

150 ml vegetable soup
250 g couscous
1 cucumber
4 tomatoes
2 shallots
4 tbsp. olive oil
2 cloves of garlic
Juice of 1 lemon
salt and pepper

 

 

Boil soup, pour over the couscous and let stand briefly. Peel the cucumber in half lengthwise, remove seeds and cut into small pieces. Remove stalks from tomatoes and dice them finely. Peel shallots and garlic and chop finely.
Mix well couscous with vegetables, shallots, garlic, olive oil and lemon juice. Season with salt and pepper and let stand 2 hours.
