SALBEI  ZUCCHINI  FRITTATA  

Sage Zucchini Frittata

200 g zucchini
2 spring onions
2 cloves of garlic
10 sage leaves
4 eggs
100 ml milk
100 g feta cheese
salt, pepper, oil

 

 

Wash zucchini and grate coarsely. Cut spring onions and peeled garlic into small pieces. Cut sage leaves into strips and fry in 1 tbsp olive oil. Add zucchini, onions and garlic, fry briefly and allow to drain in a colander.
Mix eggs and milk, season with salt and pepper and chop the feta.
Heat 1 tbsp. olive oil in a pan, mix sage zucchini mixture and feta cheese. Spread in the pan, pour eggs milk over and let thicken for 10 minutes over low heat.
