KARTOFFEL  SAUERKRAUTPUFFER

Sauerkraut Pancake

100 g sauerkraut
1 small. onion
250 g potatoes
2 tsp. cornstarch
1 egg yolk

200 g filets from smoked trout (without skin)
1 clove of garlic
250 g quark
2 tbsp. herbs (chopped)
1 tbsp. horseradish (shrewded)
12 black olives (cored)

 

  Peel onion and garlic. Chop onion finely. Mix well quark, herbs, horseradish and crushed garlic, season with salt and pepper.
Cut trout filets into 12 pieces.
Squash sauerkraut and cut across. Peel potatoes, grate coarsely and squash in a kitchen towel. Mix well onion, sauerkraut, egg yolk, potatoes and starch and season with salt and pepper.
Form 12 flat small loafs and fry it on both sides in a little oil.
Cover loafs with herb quark, place upon trout filets and garnish with olives.
