Courgette Fritter

400 g courgettes
2 cloves of garlic
70 g parmesan
2 eggs
80 g flour (plain)
50 ml rapeseed oil
250 ml sour cream
3 tbsp. chive rolls
Salt, pepper



Coarsely grate the courgettes. Salt, mix and let stand for 10 minutes. Squeeze well. Peel and press the garlic. Grate the Parmesan cheese finely. Mix the eggs, garlic and Parmesan with a little salt and pepper. Mix in the courgettes and flour.
Heat the oil in a frying pan and place 2 tbsp. of the batter in each pan as small heaps, press flat and fry until golden brown on both sides.
Mix the sour cream with the chives and a little salt.
Serve the fritters with the sour cream.
