Wash courgettes and cut into thin slices lengthwise. Fry
them in olive oil. Cut cheese into adequate pieces and furl them with
courgette slices. Put all into a baking dish.
Cover with finely chopped garlic and chilli peppers. Sprinkle with
chopped herbs and douse with vinegar.
Marinade 2 days in the refrigerator. Somtimes douse the roulettes with
the marinade.
