Finely slice the onion, finely dice the figs and remove
the stalk. Wash the lamb's lettuce and shake dry. Cut the mozzarella
into thin slices.
Mix the vinegar, oil and honey and season with salt and pepper. Arrange
the mozzarella slices overlapping on a plate, scatter the figs and
onions on top. Arrange the lamb's lettuce next to it.
Drizzle with the marinade and garnish with basil.
Variation: Replace the figs with finely diced sun-dried tomatoes and
sprinkle over the mozzarella.
